Japchae Noodles, Quick and Easy!

Korean food is becoming a trend a major trend in the food community. Here’s a recipe for quick and easy Korean Japchae noodles! You can make these with thin slices of beef, but this version is vegetarian and so yummy you won’t be missing your meat!

    Serves 4
    Time required 10 minutes
    Difficulty level 2
    Cost of ingredients 6 USD

  • 5oz (150g) yam noodles, bean thread noodles will work
  • 3 tablespoons (45ml) vegetable oil
  • 2 cloves garlic, chopped
  • 2 onions, medium sized, thinly sliced
  • 1 cup (250ml) carrots, sliced into matchstick size
  • 1 red pepper, thinly sliced
  • 6 shiitake mushrooms, thinly sliced. If unavailable substitute another large mushroom.
  • 4 cups (1L) spinach, stemmed, washed and sliced into ribbons
  • 3 tablespoons (45ml) soy sauce
  • 1 teaspoon (5ml) red pepper paste
  • 1 tablespoon (15ml) sugar
  • 1 tablespoon (15ml)sesame oil
  • 1 tablespoon (13ml) cilantro, chopped
  • 1 tablespoon (15ml) sesame seeds

Bring a pot of water to boil and add noodles. Allow to cook for 5 minutes, should be tender but chewy and will have gone from grey to clear. Drain and rinse with cold water.

Heat the vegetable oil in a large skillet over hi heat. When ready add in garlic and sauté about 30 seconds then add in onion and carrot. Stir-fry for 1 minute. Next, the red pepper and mushrooms, stir-frying until softened.  Toss in noodles, spinach and half the cilantro and cook until spinach has wilted.

In a separate bowl mix the soy sauce, red pepper paste and  sesame oil. Whisking will help it mix together. Pour over noodles and toss together, making sure everything is coated with the sauce.  Sprinkle with the rest of the cilantro and the sesame seeds on top.

To make gluten-free use a gluten-free soy sauce. To make vegan use a vegan soy sauce.

    Thank you, very useful. I wasnt actually a big fan of Spinach for many years (ok, that’s a total understatement, I hated the stuff), but after marrying a vegetarian I kind of had to put up with it, and have gradually come to absolutely love the stuff. Spinach curry is undoubtedly my absolute favouritest! I recently found an entire spinach recipes website which is my new favourite site now, you should have a look!
