Super Bowl Inspired Dishes

This weekend is Super Bowl weekend. Many people will be watching football (American football that is!) and enjoying fun food and time with friends and family cheering for their favorite team. If you don’t already know the two teams that will be playing, they are the New Orleans Saints and  the Indianapolis Colts. To celebrate we would like to share a recipe from each city to help those fans keep with the spirit of their team.

The Breaded Pork Tenderloin Sandwich has become one of Indiana’s signature foods.  Being a sandwich, it’s also a great game type of food!

Indianapolis Colt’s Breaded Pork Tenderloin Sandwich

  • 1 lb pork tenderloin, thinly sliced or pounded  into ¼ inch thickness if using cutlets
  • 1 egg beaten
  • ¼  cup milk
  • 1 cup breadcrumbs
  • 1 teaspoon garlic salt
  • 1 teaspoon  Italian seasoning
  • ½ teaspoon pepper
  • 1 tablespoon vegetable oil

Take your pork slices/cutlets and  pat dry to get rid of any excess moisture.

Put your bread crumbs and seasoning into a bowl and whisk together to make sure they are evenly distributed.  Put to the side.

Add your milk to your eggs and beat together. Take each cutlet and place in the egg and milk mixture, making sure to coat both sides. Place the pork in the bread crumbs and seasonings, again making sure to coat each side.

Place the meat in a pan at medium high heat with 1 tablespoon of vegetable oil (make sure pan and oil are already hot beforehand). Allow to turn golden brown and flip. When done, put on a cookie sheet lined with aluminum foil. Repeat with the rest of the pork.

Pre-heat your oven to 350F (160C) and place pan in oven, allowing the pork to bake for approximately 25 minutes or until cooked through.

Serve on your favorite sandwich bun with mayonnaise, sliced tomato, lettuce or whatever else you enjoy on your sandwich!

For New Orleans there are many dishes that come to mind with the Creole and Cajun style of food,  but Jambalaya just screams New Orleans!

New Orleans Saint’s Jambalaya

  • 1 cup onion, chopped
  • ¼ cup butter3 cloves garlic
  • 3 ½ cups  chopped tomatoes (or 1 can tomatoes, including juice)
  • 1 ½ cups rice
  • ½ cup  bell pepper, chopped
  • 1/3 cup chopped celery
  • 1 lb shrimp, uncooked
  • 4 chicken breasts, chopped in approximately 1 inch cubes
  • 1 lb smoked sausage (andouille or chorizo work well)
  • 1/4 cup chicken or vegetable broth
  • 1 teaspoon cayenne pepper
  • 1 ½ teaspoons salt
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon thyme

In a large sauce pan melt butter over medium heat. Toss in chicken until brown and halfway cooked, approximately 20 minutes.

Remove chicken from pan and set to the side. Add in onion and garlic to pan. Stir frequently,  allowing the onion to soften. Toss sausage and chicken back into pan allowing to cook about 10 minutes.

Add tomatoes, bell pepper, celery and broth to pan, and add in cayenne pepper, salt, paprika, black pepper, cumin, thyme, and rice, allowing to cook over medium heat for about 15 minutes, or until a good portion of the liquid has absorbed into the rice.

Transfer to a casserole dish , add in shrimp and mix in. Cover and bake in preheated oven for 15 – 20 minutes at 350F (160C), or until shrimp is cooked.

Serve and enjoy!

    Jambalaya is great but I think with a small bowl of it and a breaded pork loin sandwich, you’ll have a perfect Super Bowl meal!
