Curried cauliflower is a tasty recipe that is easy, quick and healthy! It is low in carbs, calories and fat, so it makes a fantastic side dish that satisfies but doesn’t leave you feeling bogged down in the summer heat!

    Serves 4
    Time required 30 minutes
    Difficulty level 2
    Cost of ingredients 5 USD

  • 1 head cauliflower, cleaned and leaves removed
  • 2 teaspoon (10ml) curry powder
  • 1 teaspoon (5ml) Turmeric
  • 1 cup (250ml) plain yogurt
  • 1 pinch salt
  • 2 pinches of chopped fresh parsley or cilantro

Cut the cauliflower into florets and place in a big bowl.

In another bowl combine curry powder, turmeric, salt and plain yogurt and mix well. Add to cauliflower and toss to coat well.

Place coated cauliflower on a baking sheet or casserole dish and place in a pre-heated oven at 400F (200C). Allow to bake 20-25 minutes or until tender.

Sprinkle with parsley or cilantro and allow to cool a couple of minutes and serve!
