Baked Chicken Strips

Sometimes it’s hard to find a healthier version of childhood favorites. Chicken strips are one of these types of food, but there are ways to make them so much healthier! This recipe calls for baking instead of frying as well as using puffed wheat cereal instead of white bread crumbs and makes for a great alternative that’s healthier and still tasty!

  • 2 chicken breasts, boneless and skinless
  • 1 cup (250ml) puffed wheat cereal, crushed into crumbs
  • 1 egg, beaten
  • 2 teaspoons (10ml) Italian seasoning
  • ½ teaspoon (2ml) garlic salt
  • ¼ teaspoon (1ml) black pepper

Cut chicken breasts into strips, about 1 inch thick. If there are longer pieces, cut in half so they are all about the same length.

Mix puffed wheat crumbs with salt, Italian seasoning and black pepper. Dip each strip into the egg mix with one hand and then with the other hand dredge the chicken in the crumbs.  Lay on a foil lined baking sheet.

Preheat oven to 375F (190C) and place chicken strips in oven for about 7 minutes, turn chicken over and allow to cook  another 7 minutes,  or until golden brown and juices run clear.

Dip in your favorite sauce or put on top of a nice green salad for a more adult version and enjoy!
