Light Menu Ideas from the Made in Kitchen Community!

With the warm weather upon us or almost here, it’s a good idea to eat light meals. Looking to the Made in Kitchen Community we can find some perfect recipes that involve fish, which is so much lighter than heavy red meat, and a couple of vegetarian dishes to go with them!

For an appetizer or just a snack, Tuna Snacks by Helena, are a simple and easy way to start off a meal! It’s also a fun dish that can be made with the kids!

These Sicilian Stuffed Artichokes submitted by isicilian, is a delicious side dish or even a main if the artichoke is big enough! They are pretty easy to make and won’t make you feel too heavy after eating them so you have plenty of energy afterwards.

Betty’s
Tangy Grilled Salmon Filet, is a great main dish to accompany those artichokes. They go great with other grilled veggies as well and is a quick and easy dish!

Raspberry Lime Cupcakes with Lime Icing by singerinkitchen (whom we did an interview with on Friday!) is a vegan cupcake that just screams to be eaten on a hot day, with it’s cooling lime and raspberry flavors! This dessert is light and tasty and a perfect end to a warm day!
