Continuing with the tapas theme try this tempura stuffed zucchini flowers. Tempura batter makes for a lightly fried flower and melted goat cheese inside the flower.

Stuffed Zucchini Flowers
- 8 zucchini flowers, cleaned
- 4 oz (125g) goat cheese, room temperature
- 1 teaspoon (5ml) lemon basil, chopped
- Salt and pepper to taste
Mix together cheese, basil and salt and pepper. Roll the cheese and herb mixture into 8 evenly sized balls and place inside each zucchini flower and close the petals.
Tempura batter
- ½ cup cornstarch
- ½ cup flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon lemon pepper
- 1 can of beer or soda water, ice cold
- Vegetable oil for frying
Whisk together corn starch, flour, baking powder, salt and pepper. Next add in beer or soda water and whisk until smooth, the consistency should be thin with no lumps.
In a deep pot, heat about 3 inches of vegetable oil to 350F (175C). Dip the zucchini flowers into the batter and fry in the oil until a light golden brown. Place on a paper towel to drain off excess oil before serving.
The tempura batter goes great to fry other vegetables in a nice light batter as well as these great flowers!
