Vegetarian Menu from the Made In Kitchen Community!

With this being Earth Week, why not go with a vegetarian menu! We looked to the Made in Kitchen  community for inspiration for some great meal ideas!

Start off the meal with a Barley Salad with Fresh Steamed Vegetables by Stefani@. This is a beautiful salad that  is vibrant and fresh with crisp steamed vegetables!

For the main course, how about a pasta dish of Scialatielli with tomatoes, eggplant and basil submitted by  Mimmo Corcione. If you’re a meat eater, you won’t even miss it with all the tomato and basil flavor and the great texture of the eggplant.  This can be washed down with a Long Island by Mauri1981. Cool and refreshing for those adults at the table!

For the children and the adults alike, have a slice of isicilian’s fabulous Sicilian cheese Cake. This is a perfect ending to a great meal inspired by Earth Week!

Enjoying a vegetarian meal is a great way to cut down on your carbon foot print and  is also healthy for you!
