Black Forest Cupcakes with Whipped Cream

The classic German treat Black Forest cake (American English), Black Forest Gateau (British English) or Schwarzwalder Kirsch torte (German) is a decadent and delicious cherry and chocolate dessert. This recipe is for a smaller version in the form of cupcakes!

  • 2 cups (500ml) flour
  • ¼ teaspoon (1ml) baking soda
  • 1 tablespoon (15ml) backing powder
  • 1 ¼ cups (310ml) unsweetened cocoa powder
  • Pinch of salt
  • ¼ cup butter, softened
  • 2 ¼ cup (560ml) sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups milk
  • 2 cups (500ml) fresh cherries, pitted
  • ¾ cups Kirsch, a German fruit brandy (omit if serving to children and sprinkle with about ¼ cup of sugar to draw out juices)

If making for adults place cherries in a bowl with the Kirsch and set aside. If making for children just add sugar to cherries and set aside

Whisk together flour, baking powder, soda, cocoa and salt in a bowl and set to the side.

In a large bowl cream together the butter and sugar until it’s light and fluffy. Add the eggs one at a time, and make sure they fully incorporated before adding the next. Stir in vanilla. Alternate beating in milk and flour mix until it’s fully incorporated.

Pre-heat oven to 350F (175C) and prepare a muffin pan with paper liners.

Spoon in batter into muffin liners at half way. Add in 3-4 cherries to each cupcake and fill to the rim with the rest of the batter. Reserve liquid and left over cherries. Place in oven and bake 20-25 minutes or until a toothpick inserted into the middle come out clean.

Whipped cream

  • 2 cups (500ml) whipping cream
  • 3 tablespoons (45ml) sugar
  • 1 teaspoon (5ml) vanilla

Beat together cream, sugar and vanilla in a large bowl with an electric mixer until soft to medium peaks appear. Either use immediately to top the cupcakes or chill first.

Pour remaining cherry liquid on top of whipped cream and cupcake and top with extra cherries and if you would like chocolate shavings!
