Today is Mother’s Day and every mom loves dessert! Here’s one that the kids can help with even and it’s fairly quick to do! This Blueberry and Lemon tart is fresh and delicious. If you prefer a different berry like Raspberry perhaps, feel free to exchange it for the blueberries!

    Time required 45 minutes

  • 1 pie crust
  • 3 cups (750ml) blueberries
  • 1 lemon
  • ¼ cup (60ml) sugar, plus a large pinch to sprinkle on top of the tart
  • ¼ cup (60ml) water
  • 2 tablespoons (30ml) cornstarch
  • 2 tablespoons (30ml) water

Place the pie crust in a tart or pie tin. Using a fork, poke holes around the bottom and then place in a preheated  oven at 400F (200C). Bake for about 20 minutes or until the crust is lightly golden.

In a small bowl mix together cornstarch and 2 tablespoons (30ml) water, until smooth. In a pan over medium heat, gently stir together blueberries, water, lemon juice, sugar and cornstarch mix. Bring to a boil and then let simmer until the juice thickens. The berries will have a beautiful sheen and the juice will be thick.

Sprinkle with sugar and lemon zest on top and allow to cool. Serve and make sure to tell Mom how much you care!
