Blueberry and Peach Cobbler

During the summer there is an abundance of summer fruits. One delicious way to use up these fruits is in a cobbler. This recipe uses blueberries and peaches to make a colorful and summer flavored dessert!

  • 2/3 cup (150ml) sugar
  • 1 ½ cups (375ml) blueberries
  • 1 ½ cups (375ml) peach slices
  • 1 cup (250ml) flour
  • 1 ½ teaspoons (7ml) baking powder
  • ½ teaspoon salt
  • 1/3 cup (75ml) milk
  • 3 tablespoons melted butter

Combine sugar, and cornstarch together in a sauce pan then stir in the water. Bring to a boil, making sure to stir constantly so it doesn’t burn on the bottom. Once boiling let it boil, while stirring, for about 1 minute. Add in blueberries and peach slices. Pour blueberry and peach mixture into a oiled baking dish.

Whisk together flour, baking powder and salt in a bowl. Add milk and melted butter to the flour mix. Stir together until flour is moist and forms a ball. Using a spoon drop the dough onto the peaches and blueberries.

Bake in a preheated oven at 425F (220C) for about 25 minutes or until lightly browned on top.

Allow to cool before serving. This also is fantastic with a scoop of creamy vanilla ice cream to go on top!
