Champ is an Irish mashed potato dish that is great as a side to just about anything Irish! This green and white mashed potato just makes you think St. Patrick’s day!

Cost of ingredients 4 USD
- 5 potatoes
- 1 bunch (about 5 or 6) green onions, chopped
- ½ cup (120ml) milk
- 4 tablespoons (30ml) butter
- 1 teaspoon (4ml) salt
- ½ teaspoon (2ml) pepper
Peel and cube the potatoes. Boil the potatoes until cooked (a fork should break the cubes apart easily). Drain and mash the potatoes. Set aside.
In a sauce pan over medium heat, add milk and green onions, allowing them to simmer for about 5 minutes.
Add milk, green onions, salt pepper, and butter and mix well.
To make these a bit more healthy, leave the potato skins on, just make sure they are cleaned very well and are free of sprouts!
Serve with some corned beef, lamb shanks, or have by itself as a small dinner or lunch!
