One great way to spend Valentine’s day is in the kitchen, making something special for your sweetheart. How about making it a duel effort by not only making these delicious chocolate covered cherries for someone else but with someone else! Add in a little more romance by feeding each other when they are ready.
Time required 90 minutes
Difficulty level 2
Cost of ingredients 10 USD
- 1 jar maraschino cherries, with stems and drained well
- 1/4 evaporated milk
- 1 teaspoon vanilla
- 2 cups confectioner’s (powdered or icing) sugar
- 12 ounces dark chocolate
- ¼ teaspoon salt
- 2 tablespoons butter, softened
Pat cherries down to remove excess liquid and set to the side.
Combine butter, evaporated milk, vanilla and salt then pour over sugar. Using your hands form a stiff dough., but not sticky. If needed slowly add more sugar.
Pinch off enough of the dough that when flattened out it will form around each cherry. Place cherries on a cookie sheet lined with parchment paper and refrigerate for 1 hour.
Meanwhile, melt dark chocolate and butter in a double boiler or heat resistant bowl over boiling water. Stir to combine.
Dip cherries, using the stems to hold on to, in chocolate and set back on parchment lined cookie sheet or in little paper cupcake wrappers. Refrigerate when done to allow chocolate to harden.
