It’s St. Patrick’s day and most places will give Irish recipes for corned beef (bacon if you want to be traditional) and cabbage, Irish soda bread, or traditional Irish breakfast. Instead of the usual main dish recipe lets do a traditional dessert! Apple cake is very Irish and this recipe is not only delicious but good for you!

  • 4 tablespoons (56g) butter, unsalted
  • ½ cup (100g) sugar
  • 1 cup (244g) apple sauce, unsweetened
  • 4 baking apples, cored, peeled and sliced, makes about 2 cups (440g)
  • 1/4 cup (88g) chopped walnuts
  • 1 teaspoon (4g) vanilla extract
  • 1/2 teaspoon (3g) baking powder, low sodium
  • 1/2 teaspoon (3g) baking soda
  • 1/2 teaspoon (3g) salt
  • 1/2 teaspoon (8g) ground cinnamon
  • 1/2 teaspoon (7g) ground nutmeg
  • ½ cup (63g) all-purpose flour
  • ½ cup (60g) whole wheat flour

In a big bowl cream  together butter and sugar until it’s light and fluffy. Add in apple sauce, apples, nuts and vanilla and mix together.

In another bowl whisk together the dry ingredients. Add the dry ingredients to the wet and mix well.

Preheat oven to 350F (175C). Pour the batter into a prepared cake pan and bake for 45 minute or until lightly browned and a toothpick inserted into the center comes out clean.

Remove from the oven and allow to cool about 5 minutes.

If you want to have even more St. Patrick’s day spirit whip together a shot of Irish Cream with about half a cup of whipping cream while waiting for your cake to cool. Add a dollop of Irish Cream whipped cream to each slice with a sprinkle of green sugar to go on top!
