King cake is very popular during Mardi Gras in the US and can be made in a few different ways , some with filling and some with out. Here is a New Orleans style king cake recipe that is considered to be the easiest version and the most traditional!

- ½ cup warm water (approximately 110F or 43C)
- 2 packages active dry yeast
- ½ cup (115g) sugar
- ½ cup (125g) butter, softened
- 2 teaspoons (9.5g) salt
- 4 ½ cups (575g) all purpose flour
- 5 egg yolks
- 1 teaspoon (5g) lemon zest
- 1 ½ teaspoon (7g) nutmeg
- 1 ½ teaspoon (7g) cinnamon
- ½ cup milk (118 ml)
- 1 egg beaten with 1 tablespoon milk for egg wash
Proof yeast in a bowl with the warm water and 2 teaspoons sugar of the sugar, mix well and let sit in a warm place for about 10 minutes or until doubled in size.
In another large bowl mix together 3 ½ cups, sugar, salt, nutmeg with a whisk to have everything evenly distributed. Next stir in the lemon zest.
Make a well in the center of your flour mix and pour in the milk and proofed yeast.. Add in the egg yolks, using a spoon slowly mix together the dry and wet ingredients. Mix until smooth, then add in butter a tablespoon at a time and beat into the dough before adding in the next. Continue to beat the dough until a medium soft ball can be formed, should take about 2 minutes.
Turn the dough out onto a lightly floured surface and knead, adding in another cup of flour into the dough, a tablespoon at a time. Cover and allow to raise for about 1 ½ hours or until doubled in size.
Punch the dough down then sprinkle the cinnamon over the top. Form the dough into a long cylinder and loop onto a oiled or buttered cookie sheet. Pinch together the ends to make a circle. Cover with a damp cloth and allow to double in size, about 45minutes.
Pre-heat the oven to 375F (190.5C).
When dough is done doubling in size, brush the cake with the egg wash and bake for 25 – 35 minutes or until golden brown. Allow to cool before icing and adding colored sugar if desired.
