A dish that is elegant can make one’s whole day brighter. This baked goat cheese and potato cake topped with smoked salmon a poached egg and hollandaise sauce is one of those special dishes. It doesn’t take long and is well worth the work put into it!

- 2 cups (500ml) mashed potatoes
- 1 tablespoon (15ml) flour
- 4 tablespoons (60ml) goat cheese
- 1 egg
- 2 tablespoons (30ml) milk
- 1 pinch salt
- 1 pinch pepper
- 5 ounces (150g) smoked salmon, thinly sliced
- 4 poached eggs
- Hollandaise sauce
In a bowl, mix together mashed potatoes, flour, milk, egg, goat cheese, salt and pepper. Make into about 4 flat round cakes about ½ or 1 inch thick. Place each cake on a lightly oiled baking sheet, flipping once to get oil on both sides.
Place in an oven at 400F (200C), allowing to bake until lightly browned on top, about 10 to 15 minutes.
While the potato cakes are baking prepare hollandaise sauce and poached eggs.
When cakes are done, place on a plate and top with a couple of slices of salmon, adding a poached egg on top and drizzling hollandaise sauce on top of it.
Serve warm for breakfast or brunch!
