Banana Oat and Nut Muffins

Breakfast is a great way to show Dad you care on Sunday. These banana oat and nut muffins will show that you also want him to have something not only tasty but healthy!

  • 3 or 4 ripe bananas, mashed
  • 1 ½ cups (375ml) flour
  • 1 cup (250ml) rolled oats
  • ½ cup (125ml) sugar
  • 2 teaspoons (10ml) baking powder
  • 1 teaspoon (5ml) baking soda
  • ½ teaspoon (5ml) salt
  • 1 egg, beaten
  • ¾ cup (175ml) milk
  • 1/3 cup (75ml) vegetable oil
  • ½ teaspoon (2ml) vanilla
  • ½ cup (125ml) walnuts, chopped

In a bowl, combine flour, oats, sugar, baking powder, baking soda and salt. Set aside

Using a large bowl, add in beaten egg, milk and vanilla and mix well. Add mashed banana and combine thoroughly. Stir flour mixture into wet ingredients until just mixed. Fold in walnuts.

Pour batter into a muffin tin, dividing evenly.  Place muffin tin in pre-heated oven at 400F (200C) for 18 – 20 minutes or until a tooth pick inserted in the middle comes out clean.
