Cheese Blintzes with Blackberries

Cheese blintzes are a wonderful way to start the day! This breakfast recipe includes blackberries to give a bit of a fruity kick and a creamy filling that will almost make you forget about all those other breakfast batter recipes!

  • 2 cups (500ml) fresh blackberries
  • 1 tablespoon (15ml) sugar
  • 1 pound (450g) mascarpone, ricotta, or cottage cheese
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 1 beaten egg
  • 1 pinch of salt
  • 2 eggs
  • 3/4 cup (175ml) flour
  • 1/2 cup (125ml) milk
  • Pinch of salt
  • oil
  • butter

Place blackberries in a bowl. Using a fork, lightly crush the berries, just enough to let the juices come out. Sprinkle with 1 tablespoon sugar and set aside.

In a large bowl add cheese, beaten egg, vanilla, sugar and salt. Cream together with a hand mixer and set aside.

Beat the other eggs in another bowl and add in milk and then flour. Beat until batter is smooth.

In a non-stick pan, coat very lightly with oil, over medium heat add about 2 tablespoons (30ml) to the pan and swirl aroun to make a thin crepe. The sides will begin to curl, this signals for the blintz to be fliped and cooked for a few seconds. Place on a plate and repeat until all the batter is used.

Place about 2 tablespoons (30ml) of the cheese filling onto each blintz and fold the ends and roll it up.

In the hot pan add in a little bit of butter. Place the blintz in the pan and allow to fry until golden brown.

Top the blintzes with a bit of the blackberries and enjoy!
