Cinco De Mayo is coming up and what better way to help celebrate than with a tasty burrito! This chicken and black bean burrito is a healthy and delicious version of the traditional Mexican dish. The burrito was introduced to the world back during the Mexican Revolution by Juan Mendez, a man who used a donkey (burro) to transport food which was wrapped in tortillas to keep it warm!
- 3 chicken breasts, sliced into strips
- ½ teaspoon (2ml) Salt
- ½ teaspoon chili powder or paprika
- 1 tablespoon (15ml) oil
- 1 medium onion, diced
- 1 garlic clove, minced
- 1 can black beans, drained and rinsed
- 1 large tomato, diced
- 1 cup (250ml) cheese
- 2 tablespoons (30ml) fresh cilantro
- 2 chili peppers, chopped (optional)
- 4 flour tortillas, large
Serves 4
Time required 30 minutes
Difficulty level 2
Cost of ingredients 7 USD
Sprinkle salt and paprika over chicken and place in a pan with half of the oil over medium high heat. Let chicken cook and brown on the outside. Chicken is done when the meat is white on the inside and juices run clear. Take out and set to the side.
Turn the heat down to medium and put the rest of the oil into the pan. Add in onion and garlic and allow to soften. Put the chicken back in the pan once the onion has softened and stir in the beans, tomatoes, and chili peppers.
In a non stick pan, over medium heat, place the tortillas just to heat and make them soft. Should only take a minute or so.
Spoon the chicken and bean mixture onto the tortilla, then fold and roll it around the filling. Place in a baking dish and sprinkle with cheese and cilantro and bake in a preheated oven at 400F (200C) for 10 minutes to melt the cheese. Remove and serve with salsa or just as it is!
