Sandwiches are great for lunch or dinner on hot days. This recipe is a chicken salad sandwich that won’t heat up the house making it and is also healthy and low calorie!
- 2 cups (500ml) boneless skinless chicken breast, boiled and cut into chunks
- 1 cup (250ml) plain 0% yogurt
- ½ small onion, minced
- 1 stalk of celery, chopped
- ½ teaspoon (2ml) salt
- ½ teaspoon (2ml) pepper
- 2 tablespoons (30ml) fresh parsley leaves, roughly chopped
- 6 tomato slices (optional)
- 6 leaves Boston lettuce (butter lettuce or iceberg lettuce will work)
- 6 Kaiser rolls

Mix together chicken breast, onion, parsley, yogurt, salt and pepper in a bowl.
Slice the Kaiser rolls down the middle to make a top and bottom. Place a leaf of lettuce and a slice of tomato on each roll then spoon the chicken salad mixture in the middle.
Enjoy with a nice tall glass of iced tea or lemon aid!
