Chicken Salad Sandwich

Sandwiches are great for lunch or dinner on hot days. This recipe is a chicken salad sandwich that won’t heat up the house making it and is also healthy and low calorie!

    Serves 6
    Time required 10 minutes

  • 2 cups (500ml) boneless skinless chicken breast, boiled and cut into chunks
  • 1 cup (250ml) plain 0% yogurt
  • ½ small onion, minced
  • 1 stalk of celery, chopped
  • ½ teaspoon (2ml) salt
  • ½ teaspoon (2ml) pepper
  • 2 tablespoons (30ml) fresh parsley leaves, roughly chopped
  • 6 tomato slices (optional)
  • 6 leaves Boston lettuce (butter lettuce or iceberg lettuce will work)
  • 6 Kaiser rolls

Mix together chicken breast, onion, parsley, yogurt, salt and pepper in a bowl.

Slice the Kaiser rolls down the middle to make a top and bottom. Place a leaf of lettuce and a slice of tomato on each roll then spoon the chicken salad mixture in the middle.

Enjoy with a nice tall glass of iced tea or lemon aid!
