Cooking Techniques: Uramaki Sushi

This video was shot by the MiK team at the Craft Fair in Milan. It shows a great technique for making Uramaki Sushi! The sushi chef in the video works so quickly and makes a perfect sushi roll. It’s amazing the skill it must require to make such a beautiful dish with such speed and accuracy!

Ingredients
  • 1 sheet of nori seaweed for maki
  • Japanese rice for sushi
  • 1 stick of surimi
  • 1 stick of salmon
  • 1 stick of omelette, compact
  • sushi vinegar

Place the nori on the bamboo mat (the one designed for rolling sushi, you can find it in ethnic shops) with the shiny side facing down. Moisten hands, take a handful of steamed rice and place it on the nori sheet, forming a thin layer. Add some vinegar for sushi and turn so as to find the rice face down on the pad. On the nori sheet, which is now on the surface, place the three sticks (surimi, salmon and egg they are interchangeable with avocado, cucumber or raw fish to your liking). Roll up (like in the video) and finally cut with a very sharp knife that has a wet blade.
