Mushroom kebabs are a great vegan version of the more meaty Mediterranean kebab but with a much more earthy flavor thanks to the mushrooms! Earth Day is all about the earth and what better than something with such an earthy flavor as mushrooms to be the start of the dish!

- 24 button mushrooms
- 2 zucchini, cut into inch pieces
- 2 red onions, quartered or one inch pieces
- 1 block of firm tofu, cut into 1 inch pieces
- 2 tablespoons (30ml) sesame seeds
- 1 tablespoons (15ml) sesame oil
- 2 cloves garlic, crushed and minced
- 1 tablespoons, fresh ginger, minced
- 1 tablespoon (15ml) soy sauce
- ¼ cup (60ml) cilantro, chopped
In a bowl put oil, garlic, ginger, soy sauce and cilantro. Mix well with a fork and add in the tofu and mushrooms to marinate for about 30 minutes. While this is marinating soak 8 skewers in water.
When skewering the vegetables and tofu, alternate mushroom, onion, zucchini then tofu. Continue until the skewers are full. Sprinkle with the sesame seeds
On a grill or a grill pan place the skewers full of the veggies and tofu and grill one side for 3-5 minutes, turn and grill again for another 3-5 minutes. If you don’t have a grill or a grill pan try placing on a baking sheet and putting in the oven with it set to broil. It make take less time for each side this way.
