Father’s Day Spicy Chorizo Hash

Father’s day is upon us again and of course a perfect way to celebrate is with food! On yummy breakfast item for Dad to enjoy is this flavorful spicy chorizo hash. It even includes some jalapenos to make this a great spicy dish that will kick start Dad’s special day!

    Time required 30 minutes

    Cost of ingredients 6 USD

  • 4 medium potatoes, cleaned and cubed
  • 4 chorizo sausages (or smoked sausage of your choice), sliced and quartered
  • 2 green onions, chopped and tops reserved
  • 1 clove garlic, minced
  • 1 jalapeno, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 2 tablespoons (30ml) olive oil

Add the potatoes to a pot of cold water and bring to a boil. Cook about 5-10 minutes, depending on how large the cubes are. or until a fork goes into the potatoes with little resistance but will not break up. Drain well and set aside.

In a skillet over medium high heat, add in olive oil and heat. Add in white part of the onions and garlic. Cook for about 2 minutes or until fragrant. Add in the jalapeno slices, cooking another minute. Toss in  sausage and cook about 5 minutes. Add in pepper slices and potatoes, onion tops and season with salt and black pepper and stir. Allow to cook until everything is heated through and peppers are soft.

Add a poached or fried egg on top and serve! If Dad is a vegetarian or vegan, you can always leave the sausage and eggs out.
