Main Courses, Recipes

Not everything cooked on a grill has to be meat. Try a soy and ginger marinated portabella mushroom! This can be eaten like a steak, sliced and added to a salad or turned into a mushroom burger! It’s healthy, vegan, and flavorful!

    Serves 4
    Time required 30 minutes
    Difficulty level 2
    Cost of ingredients 8 USD

  • 4 large portabella mushrooms
  • 3 tablespoons (30ml) light soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons (10ml) fresh ginger, minced
  • 1 clove garlic, minced
  • 2 green onions, chopped

Whisk together soy sauce, sesame oil, ginger, garlic and green onions. Pour the marinade over the mushrooms and allow to marinate about 20 minutes.

Place on a hot grill and allow to cook until tender, and flip halfway through.

If you enjoy cheese, try topping with some crumbled goat cheese!
