Ham is another favorite for Easter dinner. Ham is usually fairly easy to cook, but here is a recipe that show ham in a way other than the usual honey glazed. This ham is instead glazed with mango, ginger, mustard and honey!
Serves 12
Time required 150 minutes
Difficulty level 2
Cost of ingredients 20 USD
- 1 whole ham (spiral or bone in)
- 2 ripe mangos, peeled and pitted
- ¼ cup honey
- 1 tablespoon Dijon mustard
- Juice of one lemon
- 1 teaspoon cinnamon
- 1 teaspoon powdered ginger
In a food processor blend together mango, honey, Dijon, lemon juice, cinnamon and ginger. If doing by hand mash the mangos with the back of a fork as much as possible and add in the other ingredients, mixing well.
Rinse your ham under cold water and pat dry. Score the top of the ham in a diamond pattern. Place in a baking dish and using a basting brush, brush glaze over the outside of the ham.
Preheat oven to 350F (160C). Bake for about 30-45 minutes per pound (450g) of meat. Baste with the glaze frequently. The internal temperature should read 140 F(60C) for fully precooked ham, 160F (72C) for not fully precooked and 170 (77C) for not precooked.
