Mother’s Day Mushroom and Onion Quiche

Mushroom and onion quiche is just one dish to serve Mom today. This fabulous recipe is great with some tomato slices on top or perhaps some slices of cured ham like prosciutto.

  • 4 eggs
  • 2 cups (500ml) cream
  • 1 cup (250ml) fresh mushrooms, sliced into half moons
  • 1 onion, sliced
  • 2 tablespoon (15ml) butter
  • 2 cups (500ml) mozzarella cheese, shredded
  • pinch salt
  • pinch pepper
  • 1 pie crust

In a non-stick pan  over medium heat add 1 tablespoon butter and allow to melt. Add in mushrooms, but don’t crowd them so they can brown. Cook about 3-5  minutes, flipping half way through. Remove from the pan and place in a bowl.

Turn up the heat to just under medium high and melt the other 1 tablespoon butter in the pan and add in the onions. Cook until browned and place in the bowl with the mushrooms.

Whisk together eggs, cream, salt, pepper. Place the pie crust in a pie tin and spread the cheese over the bottom of the pie crust, reserve a small handful to sprinkle on top. Pour the egg mix into the pie tin and over the cheese. Sprinkle the mushrooms, onions and cheese on top.

Bake in a preheated oven at 400F (200C) for 15 minutes then reduce to  350F (175C) for another 25 minutes or until the crust is golden brown.

Allow to cool and set about 10 minutes before serving.
