Pancakes for Pancake Day

Today is not only Mardi Gras but Pancake Tuesday or Pancake Day. This is celebrated in places such as Britain, Ireland, Canada and Australia. In order to celebrate this day here is a quick and easy recipe for the thin crepe like pancakes and a simple lemon and sugar topping!

Serves 6
Time required 10 minutes
Difficulty level 2
Cost of ingredients 3 USD

  • 2 cup (250g) flour
  • 3 eggs
  • 2 cup (400ml) milk
  • ½ teaspoon salt
  • 1 lemon
  • 2 tablespoons (24g) sugar
  • 1 stick (8 tablespoons) of butter

Mix all the ingredients together to make the batter. Heat a non-stick pan on medium heat. Put a little bit of butter in the pan to allow it to melt, about 2 tablespoons per 2 pancakes, and  turn the pan in order to coat it well.

Pour the batter into the pan and tilt the pan, like with the butter, to let the batter slide around evenly. Allow to cook about 30 -60 seconds before flipping. Should be golden brown. Repeat with the rest of the pancakes.

When serving, sprinkle with lemon juice from the lemon and then sprinkle with sugar. Roll into long tubes and enjoy! This recipe makes about 3 pancakes per person and  1 or two extra.
