This Asian recipe is a fantastic quick stir-fry that includes pork and spicy Thai chilies. It’s a quick weekday meal that is also healthy!

- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2-3 small Thai chilies, smashed with the side of a knife
- 1 pound (450g) pork, minced or cut into small pieces
- 3 cups (750ml) of green beans, chopped (or the equivalent amount in long beans)
- 2 tablespoons fish sauce
- 2 tablespoons oyster sauce
- 1 teaspoon (5ml) sugar
- ¼ cup (60ml) water
- 1 cup (250ml) holy basil leaves, sweet basil will work as a substitute
In a small bowl, combine fish and oyster sauces, the sugar and the water. Stir to combine and set aside.
Heat a large pan or wok over low heat, when hot enough, add the oil. Add the onion and stir-fry for about 30 seconds. Next, add the garlic and chilies and continue stirring until fragrant. Add the pork and turn up the heat to medium high and stir-fry until cooked.
Toss in the green beans and stir to mix. Add the sauce mixture and stir, making sure it coats everything in the pan. Allow it to cook completely, with the green beans being bright in color but tender with a bite to them. When the sauce has reduced a little, throw in the basil leaves and turn off the heat. Stir the basil through.
If you don’t like it very spicy hot, remove the seeds from the chilies before adding them to the stir-fry.
Serve on rice.
For best results, make sure all ingredients are prepared before cooking as stir-frying is a quick cooking method!
