Taco salads are tasty but can be very fatty due to frying the tortilla shell. This recipe makes it much more healthy just by baking the tortilla instead! For a lighter Cinco De Mayo meal try this with ground turkey, shredded chicken breast instead of beef and 0% plain yogurt (instead of sour cream).
- 4 medium – large Tortillas, flour or corn is your choice
- 1 pound (500g) lean ground beef
- 1 medium onion, diced
- 1 cup salsa
- 2 teaspoons chili powder
- 2 teaspoons cumin
- ½ teaspoon salt
- 2 cups (500ml) lettuce, shredded
- 4 tablespoons (60ml) guacamole
- 4 tablespoons (60ml) sour cream
- 1 cup (250ml) cheese
- ¼ cup (60ml) sliced olives
- 2 large tomatoes, chopped
- 4 jalapeños, sliced
Serves 4
Time required 20 minutes

Spray the tortillas with a light cooking spray or oil on both sides. Using tin foil, make a large ball and drape the tortilla over it. Place on a baking sheet and put in a preheated oven at 350F (175C) for about 10 minutes or until the outside has a slight brown to it and the tortilla has formed a hard shell.
While the tortillas are baking, put the ground beef in a pan over medium heat. Add in half of the onion, the salsa, chili powder, cumin and salt. Cook until beef is browned, about 10 to 15 minutes) and remove from heat.
Using the tortillas as bowels, layer the shredded lettuce, beef, a tablespoon guacamole, a tablespoon sour cream, sprinkle with cheese, olives, tomatoes, onions and jalapeños on top and serve!
