Veggie Grilled Cheese Sandwich

This vegetarian sandwich is not only colorful but delicious! Layers of roasted veggies and then cheese, make this healthy yet gives a bit of richness, going beyond your average sandwich!

  • 8 slices of your favorite bread
  • 1 cup (250ml) broccoli
  • 2 red bell pepper, sliced in half
  • 1 red onion, sliced
  • 1 cup (250ml) mushrooms, sliced
  • 8 slices of cheese
  • Butter to spread on the outside of the bread

Preheat your oven to 400F (200C). Place broccoli and bell pepper on a baking sheet and allow to roast about 15 minutes or until broccoli is tender. When done,  place pepper in a bowl and cover with tin foil and allow to cool about 5 – 10 minutes.

Remove the skin from the pepper and slice.

Take a slice of bread and butter one side. Place in a hot, non stick pan and layer with one slice of cheese broccoli, pepper slices, onion slices, mushrooms and another slice of cheese. Butter another slice of bread and place that on top with buttered part on top. Flip after about 2 – 3 minutes, and cook another 2-3 minutes on the other side.

Repeat with the other sandwiches.  This works well if you have a Panini grill.
