Mother’s Day is just around the corner and a great way to show Mom you care is by making breakfast! This waffle batter is great as a pancake batter as well and is divine with some fresh fruit on top!
- 2 cups (500ml) flour
- 1 tablespoon (15ml) baking powder
- 1 tablespoon (15ml) sugar
- 1/2 teaspoon salt
- 2 eggs, separated
- 1 1/2 cups (375ml) milk
- 5 tablespoons of melted butter
- 1 teaspoon (5ml) cinnamon
- 1 teaspoon (5ml) vanilla
- 2 cups (500ml) of fresh fruit
- 2 tablespoons powdered (confectioners or icing) sugar (Optional)

Place flour, baking powder, sugar, salt and cinnamon in a bowl and stir using a whisk to evenly distribute throughout. Form a well in the middle of the flour and pour in the egg yolks, vanilla and milk, and continue to stir with the whisk. Beat the mixture together until smooth. Add in melted butter and stir to combine.
Whisk the egg whites until stiff (you may want to use a hand mixer to speed this up) and fold it into the batter.
Using a ladle, pour batter into a pre-heated waffle maker. Allow to cook as per directions for the machine. If you don’t have a waffle maker, you can use this same batter to make light and fluffy pancakes! Just pour a ladle full of batter into non-stick pan with about 1 tablespoon oil or melted butter. When the bubbles in the batter have popped it should be browned on the one side and ready to flip. Cook for a couple of more minutes on the other side.
Place waffle or pancake on a plate and top with fresh fruit of your choice and a light sprinkle of powdered sugar!
