Looking to the MiK Community for recipes is a great way to come up with food from many places. This week’s menu is centered around Mediterranean cuisine!
This Israeli hummus with Paprika and Whole Chickpeas by Joylicious (whom we posted an interview with on Friday) is a great and yummy dish that can be used with pita bread or as a dip or spread with just about anything!
Sicilian Eggplant, Artichoke and Mushroom Cake submitted by Isicilian, is a beautiful and interesting savory dish that can be made smaller and used for appetizers or a starter as well as made larger and turned into a main dish.
This Acorda a Alentejana by Helena is a Portuguese Cod fish dish that features eggs as well as the fish. This goes perfect with some rustic, crusty day old bread!
For dessert try one of these Portuguese black bean tart called Pasteis De Feijao by acquired taste. Traditionally these use white beans, but with the black beans you get some coconut on top to make for an interesting dessert that everyone should try!
Enjoy a taste of the Mediterranean through food, as it’s one of easiest ways to get away with out actually going anywhere!
