Recipes, Side Dishes

Sautéed fiddleheads are one of the easiest ways to cook this Spring time delicacy. They have an earthy and bitter flavor that gets balanced with the use of garlic!

Serves 6
Time required 30 minutes
Difficulty level 2
Cost of ingredients 6 USD (or nearly free if foraging for your own fiddleheads!)

  • 1 lb (450g) fiddleheads
  • 3 cloves garlic, crushed and minced
  • 1 tablespoon (15ml) butter
  • Salt and pepper to taste

First prepare your fiddleheads by steaming them in a pot of water for about 10 minutes. Drain the fiddleheads completely of any water and toss them in an ice water bath to stop the cooking.

In a sauté pan over medium high heat melt butter. Add in garlic and fiddleheads and sauté  in the butter for 5 minutes or until the fiddleheads start to brown. Season with salt and pepper and serve immediately!
