Earlier this week we discussed peas and how healthy and versatile they are. Here’s a recipe for a refreshing snow pea and radish salad and a nice sweet onion and garlic balsamic vinaigrette that is a great accompaniment to any salad!

- 3 cups (350g) snow peas
- ½ cup (58g) walnuts, chopped
- 1 ½ cup (174g) radishes, sliced
- 2 oz (56g) hard goat cheese, crumbled
- 2 tablespoons (3g) fresh mint
Clean and trim the snow peas and place in a boiling pot of water for about 2-3 minutes or until color becomes a brighter shade. Put in a large bowl along with walnuts, radishes, goat cheese and mint. Toss together and make vinaigrette.
Vinaigrette
- 1/3 cup (80ml) extra virgin olive oil
- 1 tablespoons (14ml) balsamic vinegar
- 1/2 large sweet onion
- 2 cloves garlic, crushed
- ½ (2ml) teaspoon salt
- ½ (2ml) teaspoon pepper
Preheat oven to 400F (200C). Peel the outside of the onion and place it and the garlic on a cookie sheet. Drizzle about 1 tablespoon (14ml) of olive oil on top and sprinkle very lightly with salt. Roast in the oven for 5 – 10 minutes.
Take out and let cool enough to be able to touch. If you have a blender or food processor place onion and garlic inside along with the rest of the oil, vinegar, salt and pepper. Blend until you reach the desired consistency. If you do not have a food processor or blender, mince the garlic and onion very fine and use a whisk to combine the rest of the ingredients together and pour on top of the salad.
Toss together and enjoy!
