Everyone needs a good salsa recipe that can be hot or mild depending on taste. This one is spicy with the addition of jalapeños, but still tastes fantastic with out them! The really great part is that it’s healthy with all the different veggies in it!
- 4 cups (1L) tomatoes, chopped
- 4 cups (1L) corn, frozen or fresh
- 1 cup (250ml) onions, chopped
- 1 avocado, skin and seed removed, chopped
- 1 cup (250ml) jalapeños, sliced
- 1 lime, juiced
- 1 teaspoon salt
- ½ teaspoon (2ml) black pepper
- 2 teaspoons (10ml) cayenne pepper
- 1/4 cup (60ml) cilantro (optional)

Place all the ingredients in a bowl and mix well. If you want it more smooth, place in a blender, food processor or use a pestle and mortar to blend more.
If you want a little heat but not a lot, make sure to remove the seeds and ribbing (white part inside) of the peppers. If you want it to have a sweeter flavor, leave out the black pepper.
This can be topped on a number of different dishes or used as a dip for some chips.
