Earth Day Dirty Cupcakes are a great way to celebrate the love of our planet and get the kids interested! This is a fun way to have children enjoy the day and get to help in the kitchen too!

  • 2 cups (500ml) boiling water
  • 1 cup (250ml) cocoa powder, unsweetened
  • 3 cups (750ml) all purpose flour
  • 2 teaspoons (10ml) baking soda
  • ½ teaspoon (2ml) baking powder
  • ½ teaspoon (2ml) salt
  • 1 cup (250ml) margarine, softened
  • 2 3/4 cup (250ml) sugar
  • 1 cup (250ml) applesauce
  • 1 ½ teaspoon (7ml) vanilla

In a bowl place cocoa and pour the boiling water on top. Whisk until it’s smooth and has no lumps. Let this cool. In a separate bowl whisk the flour, baking soda, baking powder and salt then set to the side.

In another large bowl cream together margarine and sugar with a hand mixer until it’s light and smooth. Add in applesauce and vanilla, making sure they are incorporated well. Next add in the flour a bit at a time and alternate with the cocoa mix.

Prepare a muffin tin with paper liners and pour the cupcake batter into the cups. Preheat the oven to 350F (175C) and bake the cupcakes for 20-25 minutes or until a tooth pick inserted into the middle comes out clean. Allow to cool before adding frosting.

Vegan chocolate frosting

  • ¼ cup (60ml) margarine, melted
  • ½ cup (125ml) cocoa powder, unsweetened
  • 1/4 cup (60) almond milk
  • 1 teaspoon (5ml) vanilla
  • 2 cups (500ml)confectioners‘ sugar (icing sugar or powdered sugar)

Beat together the margarine and cocoa powder together in a large bowl until combined well. Add in almond milk and vanilla, until smooth. Add in confectioner’s sugar a little at a time until you reach the consistency needed. Add more or less sugar and/or milk if needed. Frost the top of the cupcakes.

Crumble vegan chocolate cookies or graham crackers to sprinkle on top and top off with vegan gummy worms or caterpillars!
