Taco salads are tasty but can be very fatty due to frying the tortilla shell. This recipe makes it much more healthy just by baking the tortilla instead! For a lighter Cinco De Mayo meal try this with ground turkey, shredded chicken breast instead of beef and 0% plain yogurt (instead of sour cream).
