Vegetal Soy Stew

Not every-body likes this dish, but vegetal soy stew is definitely something you should try!

Heat 2 – 3 tablespoons of extra-virgin olive oil in a large pan, add finely chopped onion and sauté until soft. Add soy meat and sauté for 2 – 3 minutes. Season with a pinch of cinnamon and nutmeg and a few drops of soy sauce. Stir soy meat.
Add warm water to cover and let it stew until all the water has evaporated. Pour in tomato sauce and let it cook for 10 minutes. In a separated pot, boil spinach and peas, either fresh or frozen.
Keep on adding warm water into the stew, testing the soy with a fork to understand when it is cooked. When it is thoroughly cooked, add spinach and peas and serve.
