Stuffed "with Goodness" Mushrooms

Pop the stems out of your mushrooms, dice the stems and set to the side. Mix together pork, ginger, green onion slices, diced mushroom stems, garlic and a pinch of salt and pepper. Let sit covered, in a refrigerator at least 30 minutes. In a pan on medium heat, using about a teaspoon of sesame oil, cook the pork mixture until brown and cooked through. When cooked put in a bowl. Slice and add the tops of the green onions along with the cream cheese and mix. Using a spoon, scoop the mixture out and put some in each of the mushroom caps, then set in baking dish. Each cap can be overflowing with filling, as there will be plenty! Pre-heat oven to 350F(160C). Bake your mushrooms 5 - 10 minutes, the top should turn a golden brown and the mushrooms will wrinkle a little on the outside. Take out and let cool about 5 minutes before serving.

  • 1/2 lb ground pork
  • 1/2 teaspoon ginger
  • 2 green onions, sliced and tops reserved
  • 2 cloves garlic, minced
  • 2 tablespoons light cream cheese
  • salt and pepper to taste

Tips

Use other button types of mushrooms like brown gourmet to give a different look and use green onion slices on top to garnish your mushrooms when done cooking to give more color! Leave out the pork to make these vegetarian!
